Role in the beverage

Roasted almond is Teeccino’s signature aromatic: their original flavor is literally “Dandelion Caramel Nut” territory, and ground roasted almonds appear in the classic formulas. In the blend, almond meal contributes toasted-nut aroma, a touch of natural oil that rounds the mouthfeel (the closest thing an herbal brew gets to crema), and mild sweetness that ties the grain roastiness to the fruit sugars.

Quality criteria

  • Certified organic — and note the raw-almond quirk: all US “raw” conventional almonds are treated with propylene-oxide gas, while organic ones are steam pasteurized; only a few direct-from-farm sellers (like Burroughs) ship truly untreated raw almonds.
  • Roast for the blend: whatever you buy, oven-toast to a deep golden brown before grinding — raw almond meal tastes flat in a brew.
  • Freshness over convenience: almond oil oxidizes; buy whole nuts or recently milled meal, keep cold, and grind/roast in small batches. Natural (skin-on) meal has more tannic depth; blanched flour is milder and brews cleaner.
  • Coarse meal, not fine flour, in the brew basket — fine flour can paste up a filter.
