Role in the beverage
Baking soda is not an ingredient in the drink itself — it’s the post-tonic step. The morning beverage is deliberately acidic (citrus, ACV), and acid softens tooth enamel; the tradition is to finish the glass, then swish with a pinch of baking soda dissolved in a little water. This raises mouth pH back to neutral-alkaline, protecting enamel, and you should still wait ~30 minutes before brushing after an acidic drink.
Quality criteria
- Chemistry first: sodium bicarbonate (NaHCO₃) contains no aluminum, ever. “Aluminum-free” printed on baking soda is pure marketing — the confusion comes from baking powder, where some brands use sodium aluminum sulfate as the acid. Any 100%-pure food-grade baking soda is chemically equivalent.
- The real (small) differentiator is source and processing: Bob’s Red Mill and Frontier are mined directly from natural trona/nahcolite deposits (Green River, WY) and minimally refined; Arm & Hammer manufactures sodium bicarbonate from mined trona via the carbonation of soda ash. The end product is the same molecule.
- There is no organic certification for a mined mineral. Buy food grade, keep it dry, and replace it every year or so as it absorbs odors.

Backpacking form
This is the rare ingredient that is already in ideal backpacking form: a dry, featherweight, indefinitely shelf-stable powder. Carry a teaspoon or two in a mini zip bag or contact-lens-case compartment; after the morning tonic, dissolve a pinch in a mouthful of water, swish, and spit well away from camp and water sources (Leave No Trace).
