Role in the beverage
An optional flavor note (rank 18): a teaspoon of vanilla ties the cacao, honey, and coffee together and adds perceived sweetness without more honey. It’s the classic ambrosia rounding note — noticeable mainly when it’s missing.
Quality criteria
Pure extract only, never imitation — imitation “vanilla flavor” is synthetic vanillin (historically from wood pulp or petrochemicals) and misses the several hundred aroma compounds in real beans. By FDA standard, single-fold pure extract is 13.35 oz of vanilla beans per gallon of 35% alcohol; double-fold (2x) uses twice the beans and is worth it for baking but overkill for a blended drink — single-fold organic is the sweet spot here. Per the archive’s #1 principle, buy certified organic (Simply Organic, Frontier, Singing Dog all qualify; Heilala is ethically farmer-direct but not certified).
Know the market: vanilla is the world’s second-most-expensive spice and wildly volatile. ~80% of beans come from Madagascar, where cyclones and speculation swing cured-bean prices from under $100 to several hundred dollars per pound in a few seasons (2026 quotes for high-grade beans run $200-700/lb). That volatility flows straight into extract prices — when a bottle looks suspiciously cheap, it’s usually diluted or imitation. Buying from farmer-direct programs (Singing Dog, Heilala) also cushions growers against the bust cycles.

Singing Dog Vanilla (singingdogvanilla.com) is a small Eugene, Oregon company doing farmer-direct organic vanilla from Indonesia and Papua New Guinea; 2 oz and 4 oz bottles, some with a whole bean in the bottle — roughly $15-18 for 4 fl oz, price approximate as of July 2026 (their site didn’t render prices on fetch).
Heilala Vanilla (heilalavanilla.com) makes the most-awarded bourbon vanilla, cold-extracted from Tongan beans: $22.23 for 3.38 fl oz on sale (reg. $31.76, verified July 2026). Superb flavor and ethics, but not certified organic — a deliberate trade-off against the #1 principle.
Backpacking form
Liquid extract is 35% alcohol and doesn’t suit a dry mix. Use pure vanilla bean powder (100% ground dried beans, no sugar carrier — Terrasoul and Frontier both sell organic versions): a small pinch per serving blended into the dry base survives any trail temperature and blooms in hot water.
